Nine Fort Myers chefs team up for first-ever local "Trash Fish" event to benefit Chefs Collaborative

A multi-tasting dinner at Jack’s Farm to Fork

on Sunday, October 23rd to raise awareness of sustainable seafood

 

FORT MYERS (October 10, 2016) – On Sunday, October 23rd, Fort Myers chef David Rashty (Jack’s Farm to Fork) will bring together eight outstanding area chefs and sustainably focused organizations at Jack’s Farm to Table to present Trash Fish Fort Myers, an educational dinner to explore and celebrate sustainable seafood.

The featured chefs will showcase nine dishes including underutilized and invasive fish species such as lionfish, porgy, mullet and more in an effort to celebrate and taste well-managed and under-appreciated species of fish caught in the U.S. The night will consist of nine chef tasting stations with craft cocktails and wine.

Acclaimed chef at Fort Myers Beach restaurant continues to help Florida ecosystem while creating culinary masterpieces

Fort Myers Beach, FL – It’s all about eradicating the lionfish in Florida — in a tasty way for Jack’s Farm To Fork at Pink Shell Beach Resort & Marina.

Well-acclaimed chefs around the Sunshine State have jumped on the bandwagon to create new culinary masterpieces that incorporate the delicacy into their regular menu offerings. And that’s exactly what Chef De Cuisine David Rashty has done at Jack’s Farm To Fork in Fort Myers Beach.

The chef, whose restaurant recently won the People’s Choice Award in the 21st annual Taste of the Beach, has now added a third lionfish dish to his ever-changing menu: a lionfish tartar. The Fort Myers Beach restaurant already offers two pan-seared lionfish plates, one boasting a pea puree, fiddlehead ferns and a lime beurre blanc and another served over coconut curry, lentils and basmati rice. Fort Myers Beach, FL – An appetite for adventure isn’t the only reason guests and locals are heading to Pink Shell Beach Resort & Marina. Jack’s Farm to Fork, the hotel’s new restaurant, welcomes diners looking to indulge in fresh island flavors with a side of stunning views.

The Fort Myers beachside restaurant has launched an ever-changing menu that puts the freshest seafood, locally raised meats, fruits and vegetables at center stage. In addition to supplying foodies a unique experience, the farm-to-table philosophy is considered environmentally friendly, requiring less resources than restaurants that import foods from other regions.

October 30, 2015 - Providing a peaceful experience for guests as well as the environment that surrounds them, Pink Shell Beach Resort & Marina is proud to announce that it has renewed their Florida Green Lodging Designation.

Being the first resort in Fort Myers Beach involved in the Florida Green Lodging Program since 2008, Pink Shell Beach Resort & Marina is now a 2-Palm status property with the program.

The Florida Department of Environmental Protection launched the program in 2004 as a voluntary initiative to recognize facilities in the hospitality industry that utilize efforts to conserve and protect the state’s natural resources. To qualify and receive a designation in the program, facilities must implement numerous environmental practices in communication and education (customers, employees and public); waste reduction (reusing and recycling); water conservation; energy efficiency; and indoor air quality.

The state has praised the Fort Myers resort for efforts that include installing a trash compactor and cardboard separator, adding an electric car charging station, implementing nature programs with an on-site master naturalist, planting 10,000 plants on the beach to prevent erosion and hosting a water conservation community event. Pink Shell also recycles all paper, glass, cardboard, electronics, cooking oil and batteries while boasting a green team that meets once a month to discuss ongoing initiatives.

“We are extremely passionate about improving our environmental footprint and constantly looking to find new eco-friendly practices to utilize,” said Alicia Wiley, general manager of Pink Shell Beach Resort & Marina. “We are proud of our 2 Palm status and hope our efforts serve as an inspiration to other properties in the area and beyond.”

About Chef Paul Minnillo
Chef Paul Minnillo grew up surrounded by three generations of family steeped in the restaurant business. Minnillo earned a degree in Business Administration from Ohio’s Miami University before returning to his family’s home in Cleveland and receiving on-the-job-training in the family restaurant, Minnillo’s.  He expanded his culinary training in New York’s restaurant scene, eventually leaving for London to join Anton Mossiman at the venerable Dorchester Hotel.

Returning to Cleveland in 1985, Chef Minnillo opened his family’s crowning endeavor, The Baricelli Inn.  The restaurant garnered its share of awards, including recognition as one of the finest dining destinations in the Midwest by Food and Wine magazine and The Chicago Tribune, as well as the Zagat Survey 2008 Top Cleveland Restaurants. Gourmet Magazine named The Baricelli Inn “One of America’s Best 50 Restaurants”, proclaiming “Minnillo’s vibrant perfectionist cooking works across the board After 26 years in the business of serving Clevelanders' fine food and wine at Baricelli, Minnillo moved on to open his new, more casual venture, Flour | Italian Kitchen, in April 2011. About Chef Michel Nischan
Chef Michel Nischan is a James Beard Award winning Chef and author recognized as a sustainable food pioneer.  The son of displaced farmers, he grew up with a great appreciation for sustainable agriculture and those who work the land.  As a Chef and restaurateur, he built upon those childhood values and has now become a catalyst for change and new initiatives in local and regional food systems.  With his first born son being diagnosed with diabetes early in life, Chef Nischan has focused on creating “cuisine of well-being” with pure flavorful and local organic foods.  He was founder/owner with his partner, the late Paul Newman, of Dressing Room: A Homegrown Restaurant at the Westport Country Playhouse in Westport, Connecticut. Offshore Sailing School 50th Anniversary Celebrity Pro-Am Regatta Presented by Merrill Lynch Raises $10,000 for The Leukemia & Lymphoma Society

FORT MYERS, Fla. (January 12, 2015) – Offshore Sailing School’s founder/owners Steve and Doris Colgate welcomed 50 sailors and guests for a weekend of competitive sailing, January 8-10, 2015 at The Pink Shell Beach Resort & Marina on Ft. Myers Beach, Fla. At the end of the “friendly competition” on January 9 Steve announced that, “$10,000 was raised for the Leukemia & Lymphoma Society, increasing the total cash donation from Offshore Sailing School to LLS to $135,000 over the past five years, in addition to sailing course tuitions donated to Leukemia Cup Regattas across the country.” This Party with a Purpose, in memory of St. Charles YC (Ft. Myers) past commodore Chuck Wright who battled acute myeloma leukemia, was presented by Merrill Lynch Wealth Management with contributions from participants, friends and supporters of Offshore Sailing School and LLS.

Four of the most accomplished skippers in the world donated their time and talent for the Regatta weekend:

  • Gary Jobson - award-winning journalist, TV commentator, author of 18 sailing books, multi-time America’s Cup competitor, Chairman of the Leukemia Cup Regatta program, and lymphoma survivor
  • Dawn Riley - the first woman to manage an entire America’s Cup syndicate, first American to sail in three America’s Cups and two Whitbread Round the World races, and founder of AC contender campaign for America True, now running Oakcliff Sailing Center
  • Ed Baird – America’s Cup winner Team New Zealand and Alinghi, three-time Match Racing World Champion, ISAF Rolex World Sailor of the Year, Ed Baird
  • Mark Reynolds – four-time consecutive Olympian, two World Championships and three-time Olympic Gold medalist. Regatta crews hailed from New York, Ohio, Michigan, Illinois, Florida, and Alberta, Canada.

OOA Conducts 100th and Final Marriage at Pink Shell Beach Resort & Marina

A 501c3 public charity without a payroll that has extended benefits to U.S. Troops for nearly 10 years conducted its 100th and final free wedding on Fort Myers Beach last weekend and has now dedicated its services to the care and treatment of Post-Traumatic Stress Disorder that affects service people.

Operation Open Arms, a nationally acclaimed military outreach program, organized and arranged the wedding service that took place between U.S. Marine groom Thomas Dailey Walker and U.S. Coast Guard bride Crystal Lydia Walker just before sundown last Friday on the beachfront at Pink Shell Beach Resort and Marina. The reception was held at Matanzas on the Bay directly afterwards. The two active duty service people didn’t have time or resources to have a ceremony two years ago when they were officially married.

“They got married on the fly before deployment,” said OOA founder Capt. John “GiddyUp” Bunch before the ceremony. “They never got a chance to have a conventional wedding ceremony. I thought that since their little girls would never get to see what their mom looked like in a wedding dress, why don’t I make the 100th wedding between two active duty service people. Not only will they have pictures now, people will get to witness the wedding.”

The main purpose now for OOA is to help service people that are emotionally affected by PTSD, a mental health condition that is triggered by a terrifying event while on active duty and involves symptoms that include flashbacks, nightmares and severe anxiety as well as uncontrollable thoughts about the event.

“We have shifted our focus to PTSD. We will award all the normal benefits to those who go through PTSD appointments,” said Bunch. “We are certainly switching gears from just providing vacations to saving lives now.”

Founded in 2005, OOA had been providing benevolent services -such as weddings, restaurant meals and accommodations to name a few- through sponsors to those who serve our country.

OOA has covered more than 25 weddings of the 100 at the Pink Shell, including 9-10 on one day. At the 100th, Pink Shell not only supplied the ceremony location but also the resort photographer, who was dying to do it free of charge, according to Bunch.

“The Pink Shell has been an amazing partner to OOA. Dony Lubig has been an amazing asset when it comes to wedding planning and everything else,” said Bunch.

August 25, 2014 – The inaugural Island Hopper Songwriter Fest will bring nationally acclaimed singer-songwriters to Captiva Island and Fort Myers Beach on Estero Island during Fall 2014. Presented by BMI, along with iHeartRadio, Cat Country 107.1, The Beaches of Fort Myers & Sanibel, and the Pink Shell Beach Resort & Marina, the festival will take place over the weekends of September 27th and October 3rd at popular island venues.

July 31, 2014 – Pink Shell Beach Resort & Marina, an award winning AAA resort on Fort Myers Beach Florida, appointed Jerry Janus Regional Food & Beverage Director. He will be responsible for managing all aspects of Pink Shell Beach Resort & Marina’s Food & Beverage operations including Jack’s, Bongo’s Bar & Grill and the banquet operations. Janus’s management style will allow Pink Shell to enhance its position as the premiere resort in the Fort Myers Beach market.

A hospitality executive, Janus has over 20 years of progressive management experience within the industry. His background includes such properties as South Seas Resort – FL, Marriott Hunt Valley – MD, Marriott Boca Raton – FL. Most recently, he served as Director of Food & Beverage at La Playa Beach & Golf Resort in Naples, FL. Mr. Janus possesses the pedigree of operating four diamond-rated properties and displays a proven track record.

In his free time, Jerry enjoys travel, physical fitness of all types and yes, working in the yard. His personal life includes a wife of 30 years, and one son.

July 18, 2014 – The Pink Shell Beach Resort & Marina has hired local Naturalist Vince McGrath and has begun offering its resort guests morning wildlife walking and kayaking expeditions to explore the eco-zones of the local marine environment.

Fort Myers Beach Hotel Welcomes On Staff Naturalist
Guests are able to observe numerous flora and fauna – from what’s under the sea to who lives on the shoreline, tide pools and upland habitats of the dunes. Vince, a lifetime birder from New England, is proud and excited to be the Resort Naturalist at Pink Shell Resort and Marina, Ft Myers Beach, Florida.

Vince began his career through some formal training with museum taxidermy skins and morning bird club trips. He has been actively working for 25+ years in the hospitality field as a gardener and Naturalist in Southwest Florida, as well as keeping up volunteer efforts with various wildlife organizations. Locally, this master naturalist participates with the Lee County Bird Patrol, C.R.O.W (Vince facilitated rescues and releases for over 25 years), the Audubon of Southwest Florida (president emeritus, newsletter editor for 5+ years, field trip and program coordinator) and the Caloosa Bird Club (past vice-president, program coordinator and field trip coordinator), of which he finds himself leading field trips for every now and then.

He has received certifications in:

Florida Master Naturalist (University of Florida)
Florida Certified Nursery Professional
(Lee County Vo-Tech/Florida Nurseryman Growers Association)
Hospitality Management Supervisor (eight class course offered by AMHA)

Vince is also available for “show-and-tell” sessions at the Pool Services area to answer guest questions regarding objects and creatures they have found while on the beach.

In addition to the free walking tours, Pink Shell is offering guided kayak tours with Vince. Guests can choose from three different tours based upon their kayaking experience (beginners to advanced) and the areas they might wish to explore including Bird Island and Bunche Beach Preserve.

Vince will offer tips & techniques for beginners, as well as interpreting and sharing information about the local wildlife and ecosystems. Depending upon the tour chosen they can last from 1 to 2 ½ hours in length. These tours are the perfect way to have fun, get some exercise and learn a lot about the natural beauty that graces our coast.

Artful Giving Funky & Fabulous Interior Design Auction - July 2, 2014

July 2, 2014 - The Pink Shell Beach Resort & Marina is proud to host the upcoming Partners for Artful Giving Funky and Fabulous Interior Design Auction Breast Cancer Care’s fundraising auction. The event will feature both a silent and a live auction of original art by David Acevedo and other local artists’ works.

Partners for Breast Cancer Care, Inc. is the only non-profit agency that funds breast screening and diagnostic testing at no cost for Lee County uninsured, low-income women and men. The primary goal of this event is to support Partners for Breast Cancer Care in their mission to save lives and reduce suffering from breast cancer through improved early detection, education and access to health care.

Pink Shell To Host Record-Creating Ocean Float - June 27, 2014

June 27, 2014 - The Pink Shell Beach Resort & Marina recently partnered with the founders of the first annual Float For Life event in an attempt to raise awareness of the clean waters movement that resulted from the Lake Okeechobee releases. As the areas only ‘green marina,’ Pink Shell saw the partnership as another perfect fit to continue their efforts of working towards a cleaner future for all.

Float for Life is Southwest Florida’s first and only event promoting the environmental, economic, psychological and physical benefits of keeping our waters clean. On Sunday, July 13, 2014 numerous service organizations, local businesses and community members will gather on the beach at the resort in an attempt to create the record for the largest Ocean Float experience. The primary goal of this record-creating effort is to gain attention for the many benefits of our clean waters and the quality of life they provide in our communities.

June 25, 2014 - Offshore Sailing School Chairman Steve Colgate has announced additional activities to commemorate the company’s 50th Anniversary year.

Headquartered in Fort Myers with seven sailing vacation and commuter locations, the school has taught more than 130,000 adults and their families to sail or sail better since Olympian and America’s Cup sailor, Colgate, founded it in 1964.

“It has been 50 years since I started Offshore Sailing School from a conversation at a cocktail party in New York City with a guy who owned a cruising boat,” states Colgate. “It has been an incredibly rewarding journey and we are thankful we are able to continue our efforts to give-back.” Offshore Sailing School will host a 50th Anniversary Celebrity Pro-Am Regatta with 10 of the world’s most accomplished sailors taking part in this “fantasy sailing” event January 8-10, 2015 at the Pink Shell Beach Resort & Marina on Fort Myers Beach. Space is limited to the first 40 participants with any level of sailing experience. A sailor since he was 9, Colgate’s racing career includes America’s Cup Trials, the Olympics, TransAtlantic and Fastnet Races. He has completed numerous class championships and international distance races on maxi-ocean racers. Together, with his wife Doris, they have campaigned their 54-foot ocean-racer Sleuth and have enjoyed cruising all over the world.

Steve and Doris Colgate have been recognized with numerous industry and tourism awards, including the prestigious Sail Magazine Industry Award for Leadership in 1996, and in 2003 the US Sailing Timothea Larr Trophy in recognition of their outstanding leadership and excellence in sailing education. Doris was awarded the Betty Cook Memorial Lifetime Achievement Award from Boating magazine and the coveted Leadership in Women’s Sailing Award from Boat U.S. and the National Women’s Sailing Association. In 2013 the Colgates received the Junonia Award from The Beaches of Fort Myers and Sanibel, for “their tremendous commitment and dedication to the Lee County tourism industry.” Lee County is home to two Colgate Offshore Sailing Schools. All guests of the resort will now receive complimentary beach chairs, umbrellas, paddleboards, and kayak rentals. Pink Shell guests can now relax on Pink Shell’s beautiful beach or have an adventure on the water free of extra costs.

With their Pink Shell guest wristband, any Pink Shell guest can go down to the beach and choose an available beach chair and umbrella to relax next to the gorgeous Gulf of Mexico. Paddleboards and kayaks are available on a first-come first-served basis from 9AM to 5PM to be used on either the Gulf of Mexico side or the bay side of the resort.
